Pasta Torsk Bacon?
WATCH HOW TO MAKE IT – Bacon Tomato Pasta recipe video! Note the order of steps – start the saute with bacon, then add onion and garlic, then deglaze the skillet with pasta water (I do this specifically – to ensure I get all the flavour off the base of the skillet) before adding tomato.
▢ 160 g / 5 oz spaghetti or other long strand pasta of choice ▢ 1 tsp olive oil (or butter) ▢ 150 – 180 g / 5 – 6 oz bacon, diced ▢ 1 garlic clove, minced ▢ 1/2 onion, finely diced (brown, white, yellow) ▢ 400 g / 14 oz canned crushed tomato ▢ Salt and pepper ▢ Pinch of sugar, if needed (Note 1) ▢ Extra virgin olive oil ▢ Finely chopped parsley
Have the ingredients lined up and ready to start cooking at the same time. Bring a large pot of water to the bowl. Add a pinch of salt. Cook pasta according to packet but MINUS 2 minutes. Meanwhile, heat oil in a skillet over high heat. Add bacon and cook for 1 minute, then add garlic and onion and cook for 3 minutes or until onion is translucent and bacon is golden. Drain excess fat if desired. Scoop out a mug of pasta cooking water, then pour about 1/2 cup into the skillet. Bring to simmer and stir, scraping the skillet to dissolve in all the golden bits stuck on the pan into the liquid. Add tomato, bring to simmer and cook for 2 minutes, then turn down to medium high. Drain pasta, or if you timed it right, use tongs to transfer it straight from the pot into the skillet. Toss gently using two wooden spoons for 2 minutes, or until the sauce is no longer sitting in the skillet, it’s all on the pasta (see video). If it gets too thick, just add an extra splash of the pasta cooking water. Season with salt and pepper (remember bacon is salty!). Serve immediately, garnished with parmesan, parsley and final drizzle of olive oil if desired.
1. SUGAR: T he sweetness and flavour of canned tomatoes is affected by the quality of the brand. Better value canned tomatoes can be a touch sour. To take the edge off, add a pinch of sugar.2. Pasta per serving – I allow 80g / 2.5 oz pasta per person (uncooked weight), which is a generous bowl. Keywords: Bacon pasta, tomato pasta with bacon

Rating: 5 stars 03/18/2010 We liked this A LOT! The only thing I think next time is that I will cook the onions seperately from the bacon. They didn’t burn or anything, they just got a little darker than I would have liked. I think I will even cook a few cloves of minced garlic w/ the onions too! I added some garlic powder, salt, pepper and parsley for a little extra flavor/color.
This was really tasty! Thanks for sharing. 🙂 Rating: 5 stars 07/02/2010 Good as is but next time I might add to cooked penne some seeded cut up tomatoes making it a BPPT(bacon, parm, penne, tom)also a bit of garlic powder. Rating: 5 stars 07/09/2010 Really good and super easy. The only thing I added was a drizzle of Balsamic Vinegar.
Everyone enjoyed this very much. Thanks! Rating: 3 stars 04/22/2010 I wasn’t fond of this. My fiance had “dinner duty” tonight. I have been working late all week (rough week in general). I haven’t had any energy to spend time in the kitchen, but am sick of take-out (my fiance is too).
I had all of the ingredients to make this handy and my fiance and I thought this sounded yummy, so we decided to go for it. I must say (despite my mediocre review), this certainly was easy to put together and made for a quick, weeknight meal. Unfortunately, the end result was VERY dry – and BLAND!!! We even added more bacon grease than called for, a few (fresh) garlic cloves and pepper (no salt b/c Parmesan is salty enough).
Served bowls of pasta with sliced baugettes slathered with garlic butter (Denyse). The garlic butter was the best part of our meal lol! Although I don’t think this is “terrible,” I won’t waste my time making it again. Thanks anyways, SusieQ! 🙂 Rating: 4 stars 07/02/2010 Recipe needs a bit more flavor. naples34102 Rating: 5 stars 01/12/2016 1-12-2016 ~While I didn’t measure and just chopped and cooked, I know I used far less bacon than called for. A pound of bacon for a pound of pasta for me was bacon overload. For the 1/4 pound of pasta I cooked for the two of us, two slices of bacon was just the right amount.
