Instructions –

  1. Spread Thinly: Spread the sauce thinly on dehydrator trays covered with parchment paper or the fruit-roll sheets that came with your dehydrator. Do not use wax paper. Pour about eight fluid ounces onto each Excalibur Dehydrator ( found here ) tray and spread uniformly to the edges.
  2. Dehydrate at 135° for 6 – 8 hours. Dehydrating times may vary depending on dehydrator model and humidity. After about five hours, the sauce should be dry enough to peel and flip it over for the duration on the drying time. Flipping isn’t required, it just may take a little longer to dry. You’ll know its ready when it’s dry and not sticky.
  3. Blend the sauce into a powder.
  4. Vacuum seal or store in a sealed bag or mason jar.
  5. Now reconstitute, and serve! Not only can you bring back your pasta sauce to it’s pre-dehydrated glory, you can also play around with additions to make slightly different sauces. Want more of a cream based sauce? Add some cream or coconut milk instead of water. When reconstituting you can also add any cheeses you would like. You can also add some extra garlic or other spices if preferred, mushrooms, meat, anything you would like really.

  • I have seen some videos where they cook all three ingredients as you normally would for spaghetti and then dehydrate the cooked spaghetti and meat sauce.
  • Those meals were going to be used in a rather short term and would have a shelf life of approximately 1-2 months.
  • The reason you should’t cook them all together for long term storage is because if the meat is not prepared properly it can become rancid after a couple of months, thereby causing food poisoning if eaten.

When all the ingredients are cooked together the meat does not dehydrate properly, as it needs to be dehydrated at a higher temperature than the other ingredients. Since I plan on storing mine for long term, I dehydrated the ingredients separately to ensure that the meat was prepared properly.

I want to apologize right off the bat for the lack of pictures. I’m still getting used to the idea of taking pictures as I learn to dehydrate food. I was just so excited to be dehydrating that I simply didn’t think of taking pictures. I’ll try and do better in the future, and I will take pictures of putting the meals together and share them with you.

Hamburger Rocks The first thing I did was make “hamburger rocks” or “gravel” as it’s called (either name) in the backpacking world. When dehydrating hamburger meat you will need to use extra lean ground beef with the lowest fat content you can find. Why? Because fat does not dehydrate well, and will become rancid rather quickly.

Flip It After about five hours, the sauce should be solidified enough for you to peel it off the trays and flip it over for the duration on the drying time. Remove the non-stick sheets during the latter drying stage so both sides of the leather are exposed to the hot air.

  1. If you start the drying process before going to bed or work, the tomato sauce leather will turn out fine if you don’t flip it.
  2. It just may take a little longer to dry and you can always flip and dry it for an hour or so to finish the job when you get to it.
  3. The finished product will be leathery and dry to the touch, not sticky.

Pack It Allow the leather to cool and then tear it into pieces. Don’t let tomato sauce leather sit out because it will quickly reabsorb moisture from the air. Store leather in an airtight jar until you are ready to pack it in plastic bags for a backpacking trip.

I have packed tomato sauce leather in mail drops – vacuum sealed with daily rations – for month-long hikes, and it retained its full flavor and quality. Leather which I have stored at home in airtight jars was still in great shape when I ate it after six months. The color turns a little darker over time.

When combined with an equal part of hot water, leather will turn back into tomato sauce. Salsa Leather Blend and dry salsa the same way as tomato sauce. Create a tasty Mexican-style meal with rice, chicken and/or black beans, vegetables such as bell peppers and corn, and salsa leather.
